Chirashizushi

ingredients:
* 2 1/4 cup rice
(1/4 cup vinegar, 2 tablespoons sugar, 1 tsp salt)
* 3 eggs and 1/2 tablespoons sugar
* 1 cucumber, lengthwise
* 1/2 slices of tuna sashimi, marinated in soy sauce 2 Tablespoon and a little wasabi
(If you wish)
* 8 dried shiitake mushrooms, rehydrated in 2 cups warm water
(1 tablespoon soy sauce, 1 tablespoon sugar, 1 tsp mirin)
* 2 oz imitation crab, shredded
* 2 tablespoons white sesame seeds


How to make:
Prepare the sushi rice. Remove from shiitake and thin slices. Heat 2/3 cup of water used for rehydrating shiitake in a medium saucepan.
Add shiitake mushrooms and soy sauce, sugar, and shiitake mirin.Lalu Simmer over low heat until liquid is almost gone.
Beat eggs in a bowl and add 1/2 Tablespoon of sugar. Medium oil pan and pour one tablespoon of egg mixture and make a thin omelet like a silk cloth. Create several pieces Cut the omelette into thin strips.
Serve the sushi rice on a large platter or bowl invividual. Spread braised shiitake, cucumber, imitation crab meat and omelet strips over rice. Place tuna sashimi on top Serve Sprinkle the sesame seeds and pickled ginger on the side.
